Knitted Marzipan Cup Cakes





OK!!!! I admit it. It's not my own brilliant idea.
And, when I tried to knit with marzipan, 
it didn't work out quite as good as it did with the other person's cup cakes, which I tried to copy..... Therefore, I'm not telling which page I go
t it from, because then you'll all see, how lousy my cup cakes are compared to the originals... Blæh .
.

Well, let me just tell you you should wear some gloves when coloring the marzipan... If not, your hands will get green, yellow, purple and blue, and that is not something you want to show of!! 
"You see - I have just been coloring marzipan.. '' 

To make yarn, you have to be patient, an
d very careful, and light on  your fingers.. If not, you will not be able to make a long snaky thing. Sssssss, snake....
Make a little, and I mean little round thing, and place the long marzipan snake around and around, until y
ou have a yarn ball. 
To make a little unfinished piece of knitted yarn, make a square, and make stitches with a knife.. and then, just attache some small marzipan Sssssnakes at the end with a little thread..
Tada ta tam ta tam!!!!

Ice Cold Cheese Cake With Black Balsamic And Blackberries


This is actually a recipe from
Nigella Lawson but I decided, that since its summer, we could make it cold as ice;)

Just follow this recipe, and place it in the freezer for about an hour or so. Then the cheesecake will melt even more perfectly and taste even better. 
I have also added the balsamic and blackberries just to give it a different touch. 

Ingredients
150 g digestive biscuits
75 g unsalted butter, melted or very soft
600 g cream cheese
3 large eggs
3 large egg yolks
1,5 tbsp vanilla extract
1,5 tbdsp lemon juice
20 cm Springform tin
Extra-strength tin foil
145 tub sour cream
1 tbsp caster sugar
1/2 tsp vanilla exstract

Process the biscuits until they are like crumbs, and then add butter.  Line the bottom of the Spring-form tin, pressing the biscuits in with your hands on the back of a spoon. 
Put the tin in the fridge to set, and preheat the oven to 180 C.

Beat the cream cheese gently until it's smooth and add the sugar. Beat in the eggs and egg yolks, then finally the vanilla and lemon juice. Put the kettle on.
Line the outside of the chilled tin with some strong foil, so it covers the bottom and sides on the large piece, and then do the same again and put it into a roasting dish. This will protect the cheesecake from the water as it is cooked in its water bath. 

Pour the cream cheese filling into the chilled biscuit base, and then pour hot water from the recently boiled kettle into the roasting ti around the cheesecake. It should come about halfway up, don1t overfill as it will be difficult to lift up the tin. Cook for 50 min. I should feel set, but not rigidly. Whisk together the sour cream, sugar and vanilla for the topping and pour over. put it back in the oven for 10 minutes, and then in the freezer for one hour.

Put some blackberries on top before serving and pour sweet balsamic over.

Serve..

Coconut Brushed Apple and Kohlrabi Chips

Easy peasy healthy coconut brushed chips!!!

Just cut whichever root fruit you'd like, or some apples, brush them with olive or coconut oil, and drizzle salt, pepper and thyme/rosemary over.. Let it stay in the oven for about 20 minutes on 160 degrees!!

They may look a little overdone, exaggerated, but they are not.
They are delicious.
Be sure to make a perfect butter-cream icing, to make the cup cake look just the way you want it to look. Sprinkle with whatever you like, hearts, stars, flowers or gummy bears.
My recipe is simple, and you can add whatever you want in it. Blueberries, bananas, lemon, chocolate, cereal, or vegetables. Everything is aloud, nothing is forbidden.

Cup Cake Recipe
2 eggs
1,5 dl sugar
50 g butter
1,5 dl milk
3 dl flour
1,5 ts baking powder
0,5 ts salt
1 ts vanilla-sugar or essence

If you want to be a good housewife, you can mix the eggs and the sugar until its white, sort of fluffy and thick before adding the ot
her ingredients.
Mix it, pour it, taste it, lick it. Mmmmm

Put in the ov
en until they are done. Are you not a master chef?
10-15 minutes should do, on a low level in the oven. On approximately 200 C, or less...

Now, lets make the Butter-Cream..
People often do it the hard way, with hundreds of different stuff, but if we can do it simple, I suggest we do.

Butter Cream
250 g butter - softened
1 teaspoon vanilla extract (can be skipped)
500 g icing sugar
2 tablespoons milk

Remember to use american colour, as it is stronger, funnier and more inspiring!!!!!!

Home Made Burger With Moist Filling

There is nothing like homemade burgers... Well, perhaps, but homemade burgers are at least more healthy, more tasty and simple to get just the way you want them... 

The best thing about burgers is that you can fill themt with what ever you want... I filled this one with regular stuff, like onion, cucumber, tomato, salad, tomato pure (instead of ketchup), dijon mustard and cheddar. You can also choose if you want to make it with minced chicken or regular beef. I used beef from limousine, which is a special kind of meat tasting very yummy. 

First, begin with making the hamburger bread. Don't know how many breads this will be, but it will give around 15-20 if I should have a guess..

50 g yeast
100 g butter
7 dl milk
1 teaspoon salt
600 g rye flour
400 g wheat floor

Mix all the dry stuff and pour in a mix of 37 C milk, butter and yeast.. Let it rise for about an hour, and roll them out in small balls.
Before you put them in the over press an apple cutter over to make pretty patterns, or slice them as you want with a knife.. Paint them nicely with some milk and throw some sesame on top. Bake at 180 degrees for about 10 minutes..

For the burgers, mix some meat, chopped onion, spices you like, egg and flour, chop some veggies and serve!!!

Chocolate Dipped Fruit With Coconut Rasp

In order to make this as healthy as possible, I recommend using organic sugar-free chocolate, with 85% cocoa. Melt the chocolate slowly in a water bath and dip the fruit in it. I tried to use orange for the first time, which I imagined would be hard, because I thought it would be to juicy. Therefor I putted it in the freezer for half an hour, so the chocolate would stick to the fruit. I think it would have tasted fantastic with pink grapefruit as well, as I think the bitter taste against the strong cocoa would match really good. You can dip any fruit you want, mango, banana, pineapple, melon, strawberries, pear or apple.

Drizzle coconut over, and place in the refrigerator  or freezer before eating.

Zucchini And Tomato Monument With Smashed Cashews





I found this recipe on Vegan Yum Yum which is a page I visit often to get some inspiration or great recipes. I was just having dinner with a friend, but suddenly I found my self standing there at ten, still making dinner, that was meant to be eaten around six...So this is if you have loads of time, or having friends over that you appreciate more than others...I certainly had!!!

Cranberry Fruit Delight

There is no magic about making a fruit salad, but as I don't like fruit salad made by other than my self, I thought I could publish the recipe so people inviting me know how to make fruit salad that I like.. (brat)

Almost the worst thing I know is fruit salad with hermetic fruit, and the sweetened juice from that type of cans, but the worst thing is putting grapes into the salad. This is by my opinion how it should be putted together, if possible, everything organic, of course!!!

This is for two hungry persons who wants loads of fruit salad, perfect if you're not hungry enough for dinner!!

1 or 2 bananas
1 apple
1 kiwi
1 half of a mango
A few slices of pineapple
1 pink grapefruit or orange
Orange, grapefruit or apple juice
Almonds
Cranberries and raisins

Chop everything and pour some juice over!
Serve!!!

Sweet Balls Of Carob


This is a recipe from my favorite lifestyle/cook book, called ''Kernesund mad som forvandler familien på få uger'' I didn't think this recipe was the best one I've tasted, and my roommate almost barfed in front of me on the kitchen because she thought they tasted so yuckie!!! Me, on the other hand thought this is something I can learn to like, as this is really good for the stomach. This is also going to be candy for people who doesn't want to eat real candy, because it's not healthy...

Whole Roasted Chicken With Baked Vegetables




This is a really simple recipe, just cut some vegetables and put it in together with the chicken.
You can choose almost what ever you want from your garden or the grocery store... as long as its vegetables...!! Remember to give the chicken some spices to make it taste more. I prefer rosemary, salt and pepper, and some chili.

Vegetables I tend to use:
2 Sweet potatoes ( Or 1 apple)
1 bag with Carrots
1 bag with Potatoes
3 Peppers (Green, Yellow and Orange)
1 Red Onion

Pour water over the chicken regular to make it moist, and cook until the chicken looses easily from the bone on 180 C!!If you want, serve with wild or brown rise.

Big Birthday Supreme

For my own birthday I made this cake, with sugar fondant frosting that I colored, and roses of the same material, which I used a whole evening coloring and transforming into beautiful shapes.


First I baked sugar-bread, which is basically just egg, sugar and wheat flour.
Make as many as you want, part them in two or three and put whipped cream, jam and vanilla curd between every layer.
Cover everything with cream and place the sugar fondant over.
Make it as nice as you want;)
It was raining on the way to the part, so thats why the cake doesn't look as nice as it should on the picture.

Home Made Napoleon Cake With Puff Pastry Sheets

Nobody makes home made Napoleon cake any more, and thats why I decided to go for it!! I had never tasted it before, in my 23 year old long life, and decided, it was time...  So I started searching for recipes, and I think I found a good one at the end. 

Its not hard at all to make Napoleon cake, its actually quite simple... let me tell you how...

You need 4 puff pastry sheets (if thats what it is called) and they cant be frozen, so make sure they are not.
Put them on top of each other and roll them out so they make the same size as the plate in the oven. Make small holes with a fork, so the dough will keep the same shape and size. Let it be in the oven on 200 C for about 20 minutes. Divide it in two when done.

Cream:
6 egg yolks
60 g sugar
6 dl cream
3 ss maizena flour
6 plates of gelatin
3 dl whipped cream
3 ts vanilla sugar
Rum flavor

Put the gelatin plates in the water, and mix egg yolks, cream, sugar and maizena in a casserole on low heating until it thickens.  Add the gelatin and stir it even.
Let it cool down and make it perfect by adding vanilla sugar and rum flavor. Mix this together with whipped cream. Let it stay in the fridge for about three hours, it will then be easier to build the cake.
Put one of the puff pastry sheets on a plate you want to serve it on and add the cream. Use a lot of icing sugar on the top of the other puff pastry sheet and lift it on top!!
Voila!!!
