Ma Baker Chocolate Chip Icing Extreme


Chocolate chip is chic!!! But its all about the icing!!! Which this time looks more like a wedding cake.. but who cares - it was Ingrid's birthday, and she deserves a wedding cake...
Heres the recipe... I didn't make it up my self, I found it out there... on azcakerrecipes.com
I have just made it i little more simple...

2 cups of white flour
2 cups of brown sugar
1/2 tsp. ground cinnamon
1/2 cup cold unsalted butter, i 6 pieces
1 large egg
1 tsp baking soda
1 cup sour cream 
2 tsp. milk (this can be skipped)
1 1/2 cup semisweet chocolate chips

Preheat oven to 180 C.
Butter a baking pan and mix flour, sugar and cinnamon together. Add the butter and mix until the butter are the size of peas..
Mix in the egg and take another bowl where you mix sour cream and baking soda, later adding the milk. Mix everything together and bake for about 40 minutes.


Make butter cream icing and have fun decorating the cake, the way you want it to look...
Organic almond flakes is just something I decided to add, your choice!!! Maybe you have a nut allergy... In that case, I wouldn't recommend it...

Herb Stuffed Mackerel



Mackerel is a delightful fish, but sadly - not used as much as it deserves... 
Here I will show you a nice and healthy recipe you can impress friends, family and lovers with...

Clean some mackerel by cutting with a knife from the ass until the head... Drag the stuff inside the mackerel out and clean it with water...Do this to as many fish you want to... some people eat one, some eat two, and very few people eat three, but if they do, don't blame them, blame your self for cocking a great meal, and me, for giving you this fantastic recipe..

Take some salt and pepper and rub it inside the fish.
Stuff it with some fresh herbs, for example rosemary, sage, thyme, chives and mint.. try to choose some of them, everything together can be a little to much.

Cook it in the oven until done, at 180 degrees. Its done when it's done, I can't remember for how long it should be there...

Squeeze some lemon on top 5 minutes before taking it out, pour a little water and spice it up with more pepper and salt..

Serve together with a simple green salad, some oven-roasted potatoes, fresh lemon and some expensive white wine!!!

Since We Are Already Speaking The Banana Lanuguage


As I've already said... Since we are already talking the banana language, why not care for the people that can not eat gluten, drink milk or eat sugar??? It's important to let everybody be a part of the tremendous cake - so we can all live in perfect harmony.

Let me just start, by bragging of a fantastic book called Kernesund mad, whick is a danish book i bought a little while ago.
In there, it is a recipe, which I now have tried, and proudly can say, handed out, to those in needs - the ANSA meeting over at Julies...
Although we also had buns and cocoa, this went down as a slippy eel..only sweetened with the juice of one orange. HEAVEN!!!!!!

I'll post the delicious recipe, so neither of us is stuck with balloon tummies, slimy throats or runny noses.... Which people tend to get if their body can't handle sugar, milk or gluten...

Glutenfree Banana cake!!!!!
50 grams of sesame seeds
150 grams wholemeal rice flour
150 grams buckwheat flour
100 grams roughly chopped hazelnuts
1 dl rice flakes
1 dl rice milk
2 tsp cinnamon 
2 tsp ginger
2 tsp carnation
1 tsp cardamom 
1 tsp nutmeg
1 tsp salt
1/2 tsp pepper
Juice from 1 orange and the orange part of the peel 
2 dl raisins
2 tsp baking powder without wheat
100 g coconut oil
4 rotten bananas
2 eggs

Nice.. do you have all of this? If you have.. check if it's also organic, would make both me and you more happy, and the person eating it of course...

Mix all the bananas, coconut oil,  ricemilk, and eggs and add the orangejuice little by little... Mix all of the dry...
Put in the oven for 30 minutes, on 180 C, or for 15 minutes, if making Cup Cakes...

White Bride Girly Kisses Meringue



Meringue's are so nice, but unfortunately they are not healthy at all.. I decided not to eat mine, and I tried to force someone to take them to a party, but the person said no... well well, I got some pictures after all, which was the whole purpose.  

The most important thing when you make merin
gue, is not to have any thing thats fat in the bowl. By that I mean  for example oil or butter. 
If you have made butter cream icing in it before,  be sure thats its perfectly clean as fat or egg yolk interferes with the formation of good foam.

You need:
6 egg whites
300 g sugar

Beat the egg whites until foamy and g
radually add sugar... be
ating until mixture forms stiff peaks..
Add color if you want to, eater from juice of any kind 
of berries, or actual color made for coloring..
You can also add chocolate, or spread some nuts on the top of the meringue, 
before putting into the oven..

Let it in there for 3 hours (double time for twic
e the size meringues) on 90 degrees.
Serve alone, with whipped cream o
r together with ice cream and jam.

Mmmmmm Mussels



I know its not summer yet, but what is better on a summer day than  mmmm mussels?
I prefer fresh mussels from the fjords in Norway. 
The best thing is to take the boat and make someone jump in the water, 
to pick the mussels from the rocks.
When other boats makes waves, I guarantee a good laugh when the person picking them gets smashed into the rocks in the water!! 
If you buy them, it will save you from a whole lot of work cleaning them, but its nice sitting with a beer, talking and cleaning mussels while the bread from the oven is pouring out a fresh baked smell!!!

Mussels
Onion
Chili
Garlic
Cream
White wine
Pepper
Salt
Lemon
Coriander (Optional)

Fry the onion, chili and garlic you just chopped in a casserole in some olive-oil, together with some salt and pepper, lightly
Add cream and white wine, and when it has boiled for a little while, add the mussels. Let them be in this fantastic mix for a couple of minutes. Do not let it boil for a long time, they will get hard and make you don't want to eat them.

Eat with fresh bread and aioli.

Freshly baked bread
3 dl nuclear milk
3 dl water
50 g yeast
1 pinch of salt
Some honey
500 g whole meal flour
500 g fine wheat flour
0.5 dl olive oil

Mix cold nuclear milk with hot water, and mix in the yeast.
Add salt and honey, and later the whole meal flour. Let it stand for one hour,covered in plastic, until it bubbles.
Mix it with the olive oil, and add the what flour, little at the time. Use your hands and make it to a perfect dough.  
Let it rise to double size and form it to two breads. Slice them on top with a sharp kitchen knife, and spread some wheat floor over it to make it look home made.
Bake them for 30.35 minutes at 200 C. 
If they get to dark, cover it with foil.
If you are not sure if its done, simply knock under the bread. Its supposed so sound hollow!!!
Cool on a ''grill''

Aioli
4 large cloves garlic, crushed
2 tablespoons lemon juice
2 egg yolks
1/2 teaspoon salt
Pepper
1 cup mild olive oil (preferable from kalamata olives

Place all the ingredients except the oil into a food processor. Process until well mixed. While the processor is running add the oil slowly, one tablespoonful at a time, until all has been added. The mixture will be thick and creamy, and with a good olive oil, more yellow than you are used to!!!

Danish Delicious Tasty Rye Bread






Rye Bread is without doubt the best bread I know. It's a pity they don't have them all over Europe. In both Germany and Denmark, bread made of rye is the most common bread, and it has been the main bread for ages.
The rye bread is also starting to get more and more popular in Norway, 
and I hope you enjoy the recipe.
The rye bread is a type of bread made with various percentages of flour from rye grain. 
It can be both dark and light in color, depending on the type of flour used. 
Typical for the rye bread is the kind of sour and dark taste. 
This recipe is just a basic one. Why not add a lot of sunflower seeds, or almonds?
Put whatever you like in it, let it rise, and cook it for one hour on 180 C...

Use this:
2 packages of yeast
0.5 cups of buttermilk
6 cups course rye flour
2 cups all purpose flour
3 tsp salt
2 tbsp molasses
1 egg or egg white, optional for glaze (wouldn't recommend it ;) )

Let the yeast dissolve in warm water. Heat the buttermilk slowly warm, and check that it has the same temperature as your arm. Add the yeast to the buttermilk, together with salt in a large mixing bowl. Add rye flour, kneading well with a spoon. cover it up with plastic and let it rise for about 0.5 hours. Put the dough into a pan and let it rise again for the same amount of time, or longer.

In my picture I have made the bread like a little heart!!

Eat with Norwegian goat cheese or salted butter...
Or some other stuff you like putting on bread

Smoothie of the day - Peanut and mango Shake



I must admit that this smoothie isn't the best thing I've tasted.. but still, it's worth writing about... 
The peanut butter, for sure have to be organic and sugar free, if not.. . you can just forget the whole thing... permanently..
My favorite peanut butter that's unsweetened is one with a light purple etiquette...  but I guess it doesn't help you that much, after all, when i don't remember anything more than that..
For this recipe, you need some nice stuff to make it with, but don't you worry to much, i'll talk you through it..
Time for shopping...
And in your basket.... 

This:
3 dl of Rice milk
2 tbsp of Life's oil
2 tbsp linseeds
1 topped tbsp of peanut butter
The juice and the peel from half a lemon
4 tbsp protein powder
1 banana
300 g frozen mango

Home from shopping, blend the whole thing to a milkshake texture thing.
Pretend it tastes good and enjoy it as a healthy snack.
